    Spinach Fried Rice/Palakura Rice - A healthy, tasty and delicious lunch for children


    Nowadays everyone is busy in their works. Mornings will be very hectic for women to prepare different varieties of tiffins for children. Each person in the house like different curries, it is not easy to prepare separate curry for each person. So, a easy to make and tasty food if give to our children, they will take it very happily.

    Palakura Rice (Spinach Fried Rice)

    Ingredients for Palak Rice required

    Rice - 2 cups (cooked)
    Palak/spinach leaves paste - 1 cup
    Jeera - 1 tsp
    salt - to taste
    curry leaves - few
    Oil - 2 tsp
    Sajeera - 1 tsp
    Kaju - 4 tsp
    Pachimirchi - 8 nos.

    Preparation

    First take palak leaves and clean well and wash it 4 to 5 times. Now put the palak leaves and pachimirchi in a mixer and make a soft paste. Keep it aside.

    Take 2 cups of cooked rice. While cooking this rice put 1 tsp of oil, so that the rice will be soft and loose.

    Now put a kadai on stove. Put oil and allow it to warm up. First put sajeera, jeera. Now put curry leaves, kaju. Keep it on the flame till the kaju turns into light brown colour. Now add the palak paste to it. Add salt and turmeric powder. Cook it for 10 min. on low flame.

    Now add the cooked rice. Keep it on the stove for 5 minutes.

    Now the palak rice is ready for serving.

    You can garnish the rice with carrot, cucumber pieces.
